A 2 iron is pretty useful off the tee, especially on a windy day, but pretty useless off anything but a perfect lie otherwise. Also, you need to have a good bit of power and swingspeed in order to elevate it sufficiently. For me, SS (~100mph), I hit my 2 iron about the same distance as my 3 iron, so unless its windy, theres no point carrying it.
I used to be one of those who thought that hybrids were pretty much hyped-up rubbish. But after learning how to hit it off the tee, off the fairway and out of the shit, it really does make things easier. The key ingrediant for me was to get one with a steel shaft, so it feels like an iron and therefore swing it like one.
Also, if you really want a low lauch tee and fairway weapon for a windy day, get a low lofted hybrid (~16deg) with a steel shaft. A good bit harder to hit consistently than the more common ~20deg ones, but still easier than hitting a 1 or 2 iron.
